The Story Behind This Coffee
This coffee is sourced from the CESMACH Cooperative in Chiapas, Mexico and decaffeinated using the Mountain Water Process at Descamex.
Unlike traditional chemical decaffeination methods, the Mountain Water Process uses pure water to gently remove caffeine while preserving the coffee's natural flavor compounds. The coffee is soaked in water, allowing caffeine and soluble materials to dissolve. The caffeine is then filtered from the water before the flavor-rich water is reintroduced to the coffee beans.
The result is a decaf coffee that retains much of its original character, aroma, and sweetness without the use of chemical solvents.
Grown between 1200 and 1750 meters above sea level in Chiapas, this coffee provides a smooth, approachable cup with notes of raisin, dried fruit, and a clean finish.
